After quitting sugar last year, processed and highly refined snacks that used to be a very regular occurrence went out the window. When I do get a craving for something sweet, I try to have some refined sugar free options to hand.
This slice has just the right amount of sweetness to satisfy the craving without wanting to devour the entire batch.
You will need:
1.5 cups of natural almonds (or nuts of your choice)
250g pitted prunes
1/2 a cup of raw cacao
1/4 cup of cacao nibs
2-3 tablespoons of coconut oil
2 tablespoons of unhulled tahini
In a food processor, whiz the nuts until they resemble meal (you can also use 1.5 cups of almond meal and skip this step). Whack in the other ingredients until they are well combined. Line a slice tin with baking paper, press the mix in and refrigerate until firm.
Cut into small squares and store in the fridge.
